We all know spinach is a healthy food. Boiling it as a main ingredient in a soup making its soft not only will appeal to our taste buds but also making it a healthy lifestyle diet.
Ingredients
1. Spinach
2. Carrots
3. Wolfberry seeds (Goji)
4. Egg
5. Ginger
Soak the spinach in water added with salt for at least half an hour. After that, pour out the water and soak again for another half an hour with water.
Put some slices of carrot and ginger plus goji in a pot and fill it with water.
When it boils, add some vegetarian sauce, sugar,salt and pepper. Lower the heat and when the water boil again, add in spinach.
Cover the cooking pot. When the soup is boiling again, turn off the heat and add in the beaten egg.

For a more simple version, one can use spinach, egg and ginger only. This version is especially suits to those who enjoy SIMPLE LIFE foods.
