This vegetable curry is very suitable for vegetarians as it contains no garlic, onion and meat at all. This spicy dish can really increase one's appetite and make one eat more !!!
Mixed Vegetable Curry Ingredients
Potatoes cut into bite sizes and soak in water.
Long beans cut into one inch length.
Tomatoes cut into small slices (can be crushed and peeled).
Brinjal/eggplant cut into bite sizes.
Carrots cut into cube sizes.
Vegetarian meat (to enhance the curry dish taste and make one stomach more full).

Curry powder (fresh from morning market) plus coconut milk.
Lemon grass to make the curry dish more aromatic.
Cooking Method
Pour some oil into the frying pan. Add potatoes, eggplants, carrots and vegetarian meat. Add in some vegetarian oyster sauce, black soy sauce, sugar and salt. Saute the mixture for a few minutes and pour out the content into a plate.
Pour some oil and add curry powder plus lemongrass, tomatoes and long beans. Mix the content for a minute and add in the flavoured stir-fry veggies.
Add water, mix the dish and then cover the frying pan. After 15 to 20 minutes and the veggies are soft enough (especially the carrots and potatoes), add some coconut milk and stir for a minute or two. The dish is ready for serving.
We normally eat the vegetarian dish with rice but you can also substitute the rice with bread. You can put some gravy and veggies to the bread and then send it down your throat. Sure taste yummy!!!
