Sometimes it doesn't take a lot of effort and time to prepare a delicious vegetarian soup. Using only radish, tomato (optional) and maize (corns), such simple soup can be prepared in an hour or two.
Ingredients
1. Radish
2. Maize/sweetcorns
3.Tomato
Sidekicks : Wolfberry, red dates and slice of gingers.
Steps
Remove the outer skin of radish and cut into thick slices. Next, cut the maize into a few sections and soak both veges in a pan filled with salt water for half an hour. Tomato can also be added as an option.
Soak the wolfberry and red dates.
Fill a claypot with water and put all the ingredients in. Add some ginger slices to reduce the coolness of the vegetarian soup. Heat with strong fire.
When the soup begins boiling, reduce the heat. Season the soup with vegetarian stock, pepper, sugar, salt and mushroom powders. Keep the low heat for around two hours.
